The Greeks put a monster under it, Typhon, whose struggles shook the earth and whose breath became the eruptions, and the mountain has never contradicted them: it erupts several times a year, its height changes with each one, and the city of Catania at its foot was rebuilt in the seventeenth century out of the black lava that had destroyed it, which still gives the baroque centre its dark sheen. The way up starts at Rifugio Sapienza on the southern side, where a cable car lifts you above the last trees onto bare grey ash at 2,500 metres; from there 4x4 buses and guides take you higher, toward the summit craters, as close as the day's activity allows, through black cinders and steaming vents with the sea far below.\n\nLower down, the Silvestri craters are side vents that broke out on the flank in 1892, cones of red and black cinder that can be walked around in half an hour. When Etna is active, the thing to do is stay on the slopes into the evening: after dark the fountains of lava from the summit are visible from the whole eastern coast, and from the mountain they light the sky. From December into spring two small ski stations open lifts over runs of snow on black rock, with the sea in view from the top. Below the ash the volcano is farmed. Old cellars press the native Nerello Mascalese grape into Etna Rosso, a pale, high-acid red that tastes of the mineral soil, from vines that are often ungrafted and more than a century old, survivors of the blight that killed Europe's vineyards because the insect fails in Etna's loose volcanic sand.
